Method

This recipe calls for your BBQ to be set up in a couple of ways. Firstly we want to add some smoke to the ribs, running the barbecue at 225°F (110°C), so water pan in place. To finish off we’ll be grilling directly over the fire to make sure the fat renders.

STEP 1

Score the skin well, then coat the ribs with Olive Oil.

STEP 2

Apply your favourite rub (we recommend our Herbylicious BBQ Rub) salty, herby ones work well.

STEP 3

Place the ribs on the smoker, add some Maple wood for flavour and cook for around 45 minutes at 225°F (110°C).

STEP 4

Set up your BBQ for direct grilling (by removing the water pan) or you can use the ProQ Flip ‘n Grate and sear the ribs until golden and soft. Tip: Use a toothpick to probe the meat for tenderness, you’ll know they are done when the toothpick slides effortlessly into the meat . 

STEP 5

Remove the ribs and rest for around 15 minutes before serving.
