favourite BBQ Sauce.

Method


STEP 1

Light your ProQ Smoker, then prepare the ribs by removing the membrane / silver skin. On the underside of the ribs start by pealing the membrane at one end, gradually making your way down the whole rack. This can be a slippery job and a paper towel can help. If you are lucky you may get it off in one piece!

STEP 2

Apply ProQ All Purpose BBQ Rub to all external areas of the meat massaging as you go, and making sure you have nice even coverage. Leave for at least 20 minutes but overnight if possible.

STEP 3

Put meat on the smoker at 225°F, and add your ProQ Smoking Wood Chunks. Place the ribs directly onto the grill or in your ProQ Rib and Roast Rack and leave for 1 ½ hours.

STEP 4

Remove the ribs from the smoker. Wrap each rack separately in foil and add half the butter, brown sugar and apple juice to each package. Your aiming to make a boat style shape with the foil. Be careful with the bones poking through the foil, you may need a double layer to be safe from spillage.

Place the ribs back onto the smoker for another hour.

STEP 5

Remove the ribs from the smoker and take them out of the foil pouches. Any liquid left in the pouch can always be saved for your BBQ glaze. With your favourite BBQ sauce coat both sides of the ribs and place back onto the grills for 30 minutes. You may want to give it a second glaze after 15 minutes depending on how saucy and sticky you like your ribs.

STEP 6

Serve and enjoy! You can serve as whole racks, half racks or cut into single ribs, it’s your call – but be quick deciding as these soon disappear once off the smoker!

  • Baby Back Pork Ribs
  • 60ml Apple Juice
  • 2 Tbsp Brown Sugar
  • 2 Tbsp Butter
  • ProQ All Purpose BBQ Rub
  • 200ml BBQ Sauce

We have used 2 racks of ribs but feel free to adjust the recipe to however many you want. Our ProQ Rib and Roast Rack can take up to 6 at once!
